New details emerge for Buck & Rider affiliated restaurant in Old Town Scottsdale Article originally posted on Phoenix Business Journal on April 2, 2025 Hi Noon Hospitality — the company behind Buck & Rider and Ingo’s Tasty Food — is preparing to open its third restaurant concept and has released more details about the new eatery. Expected to open in the fall of 2025, Pinyon will be a new Mediterranean-inspired restaurant, focused on serving up seafood from the entire Mediterranean region. The new restaurant will be at 7355 E. Scottsdale Mall in Old Town Scottsdale, which is near the long-running and popular martini bar AZ/88 and the restaurant, and its patio will look out over the Scottsdale Civic Center park. Pinyon’s menu and name were inspired by the travels of Hi Noon’s founder Adam Strecker. As Strecker traveled the coastal areas of Turkey, Italy, France, Malta, Greece, Spain and Morocco a resilient pine nut tree similar to the pinyon trees found in the Southwest U.S., stuck out to the restaurateur. Pine nuts have been integral to Mediterranean recipes for generations, and Strecker wanted to create dishes for this new restaurant that are just as timeless and have cultural connections.
